Food Insecurity Part II

Today in class, we continued with our discussion of food insecurity in the United States. The statistics that we discuss are unbelievable. It is scary to think that the region we are in is the poorest and one of the highest food insecure regions in the U.S. Ranked number 6th in the nation for food insecurity, Ohio keeps creeping up there in the poles. Something has to change! Other than that, we picked our interest groups for our garden plots and the agency that we individually have to explore. I am so excited to get started on the plot! We have the DASH diet and I think it will be relatively simple to include a variety if produce that includes magnesium, potassium, calcium and fiber.
Lastly, one interesting fact that I think is pretty relevant is that a home gardener can spend $70 annually to make $600 worth of produce! Wow...
