
Another speaker....who would have ever guessed. :) But I believe that every speaker who has come through has been different in their own sort of way. Today, Karen Baker, RD, LD the Nutrition Affair Director for the Dairy Council came in today to talk to our class. I enjoyed her talk. She is perfect for her job in communications. She knows how to keep the audience entertained and she really knows her stuff!

About the Dairy Council. Karen Baker oversees the entire state of Ohio's dairy farms. Funding is 100% from dairy farms. For every 100 pounds of dairy, they receive $0.15. If you think about 7 pounds for every milk gallon, that is quite a lot of money. So Karen's job is overseen by the Dairy Counsel headquarters. Overall, I believe the entire counsel is evaluated and monitored by the federal government. Some of the purposes of the Dairy Counsel is to communicate scientific research on dairy through speakers, meetings, exhibit, and media, but also be an advocate for dairy nutrition. They do this by committees, collaborations, and patient education tools. One of their famous programs is known as Fuel Up to Play which they sponsored with the NFL to promote exercise and consumption of dairy to schools.
Not only did Karen talk about her job in the dairy counsel but she talked about how to communicate to our audience. One thing I will take away from her talk was that customization is really key to our audience. We want to choose things for ourselves and not have our choices decided for us. Her example was the frozen yogurt bar. Also, Karen mentioned that our audience eats with their eyes. So us trying to explain all our nutrition crap instead of talking about the taste of food is a waste of time. Lastly, don't tell our audience what they can't eat, but talk about what they can eat. Research shows it! :)
